Breakfast Salad is one of my new favorite, delicious ways to start the morning! This is a savory salad recipe and is loaded with vegetables plus hard boiled eggs, cheese, and bacon!

My middle child won’t eat anything that resembles salad or is green so I have to hide them in veggie smoothies. My youngest though, he begs for this salad for an after school snack! Yay for a child that actually asks for a healthy salad!
Eating salad for breakfast.
I’m guessing you’ve had fruit salad for breakfast before, but if you haven’t ever tried a vegetable salad for breakfast you’re missing out! It’s the perfect way to get a few servings of veggies in before you really even start your day.
If you just aren’t into eating salad for breakfast you can always serve this for brunch, lunch, or dinner. I’ve served it alongside a hamburger patty for dinner before and it seriously hit the spot!
What to serve with breakfast salad.
I don’t know about you, but after the holidays are behind us, I start craving vegetables, salads, and pretty much anything else healthy. But, then again I have a serious sweet tooth and know myself well enough to know I’m not going to survive without at least some sweets! My meal just isn’t complete without sweet and savory and I’m not going to beat myself up over it!
Besides satisfying my cravings, I always feel like salads need to be served with some kind of bread. My mantra when it comes to eating healthy is moderation. That’s why I love serving this salad with Rhodes AnyTime® Cinnamon Rolls! All you have to do is stick them in the oven and frost them!

What can I add to savory breakfast salad?
The sky is the limit here. Use your imagination. This is a great place to use up leftovers in the fridge too. I’ll give you some ideas, just for a place to start.
- hard-boiled eggs, soft boiled eggs, or fried eggs would be great too!
- crumbled bacon
- diced ham
- cheese, any variety will be good
- avocados
- scallions
- tomatoes
- herbs; cilantro, basil, parsley, etc.
- broccoli
- peppers
- mushrooms
- zucchini
- roasted sweet potatoes
- roasted potatoes
It’s also fun to play with different kinds of lettuce to build your salad on
- spinach
- kale
- spring mix
- romaine
- arugula
Easy Breakfast Salad Recipe
You guys, I’ can’t even tell you what a huge fan I’ve become of breakfast salads! Feel free to add your favorite vegetables to customize several different breakfast salad recipes that YOU love!
Personally, I think eggs and bacon are a must in breakfast salads, other than that it’s a blank canvas! I have a feeling you are going to love eating vegetables for breakfast, especially if it’s served with cinnamon rolls!

Spinach Salad with Eggs and Bacon

Ingredients
For the Spinach Salad
- 12 ounces baby spinach
- 4 hard boiled eggs
- 4 strips bacon
- 1 avocado
- 1/2 cup mozzarella cheese other cheese can be substituted
- 1 tomato diced
- 1 Tablespoon parsley optional
For the Dressing
- 2 Tablespoons red wine vinegar
- 1 Tablespoon dijon mustard
- 1 Tablespoon honey
- 1/4 teaspoon Kosher salt
- to taste pepper
- 3 Tablespoon olive oil
Instructions
- Prep the ingredients. Cook and crumble slices of bacon. Hard boil, peel, and dice eggs. Chop or slice veggies. Grate or cube cheese.
- Mix the dressing. Add vinegar, dijon mustard, honey, salt, and pepper to a blender. Blend until smooth. While the blender is running on low slowly drizzle the olive oil in until it’s smooth. Taste. Adjust seasonings as needed.
- Make the salad. Add the baby spinach to a large bowl and drizzle with vinaigrette. Toss to coat. Place eggs, bacon, and veggies in a large salad bowl. Sometimes I like to layer individual salads on serving plates. That way everyone can add whatever ingredients they like.
