The most popular New Year’s resolutions revolve around becoming more healthy. After the Holidays I can admit that I am more than ready to put down the calories and eat healthy and refreshing foods for awhile. At least a few days. However, it’s a little harder to talk the Big Boss and the kiddo’s into trading fudge for celery!
I’m always on the lookout for refreshing and fun ways to incorporate veggies into our diets. My middle child practically refuses to eat veggies. This is one way that I can sneak carrots in without a single word of complaining. In fact, they practically arm wrestle each other over the last tablespoon of smoothie in the blender. It’s a big deal you know!
It’s easy too! Add some carrots to your blender.
And some canned peaches and ice. Did I mention this recipe also helps with organization/cleaning resolutions? Well, it does because it helps rotate through the almost expired canned peaches.
Add chunks of pineapple, lemon juice and honey.
Blend until smooth! There you have it. Sit back and enjoy watching your kids drink down those carrots.
Here’s to keeping the New Years resolution!
Not only do I love tricking my kids into eating drinking healthy food and rotating my food storage, I also love how easy this is to throw together. I like to serve it for breakfast with a muffin or breakfast cookie!

Peach & Carrot Smoothie
Ingredients
- 1 1/2 c. canned peaches drained (reserve the juice)
- 1 c. pineapple chunks
- 1 medium sized carrot diced
- 1-2 c. peach juice
- 1 c. crushed ice
- 2 T. lemon juice
- 2 T. honey
Instructions
- Drain peaches. Reserve 2 cups peach juice. Adjust amount of peach juice depending on how thick you want you smoothie to be.
- Add all ingredients to a blender including 1 cup peach juice. Add more if necessary to thin smoothie.
- Pour in glasses and enjoy immediately!

This looks delicious! I’m a Georgia native, so naturally I’m a peach fiend. I buy peaches by the bushel every year, and macerate and freeze them for year-round use. I think those will work great for this.

I wish I had easy access to fresh peaches! My family loves eating them everyday while they are in season. My boys love peaches and cream for breakfast! I freeze lots of peaches to use in smoothies, cobblers, Jello and other desserts all year long too!

I’m new to the whole smoothie revolution. This recipe sounds fantastic to me. Anything to get my kids to eat their veggies. I guess my only question is, do you cook the carrots first or add them in raw?

Welcome to a whole new world of smoothies! I love smoothies because they are so quick to throw together and I can sneak lots of healthy “stuff” in and the kids never know! I use raw carrots in my smoothies. I have a Vita Mix blender so it really blends them fine. I love that thing! Enjoy your smoothie!

It’s alot easier in a Vitamix or Blendtec, but you can do the carrots in a regular blender too, as long as the blades are sharp. You would just have to chop them up more than she has here. Otherwise, you can cook them just a bit to get them alittle mushy. One thing I do is when I get my carrots out of the garden, I always have way more than I can use fresh, so I take some and I will cook them and puree them, and then freeze them into ice cube trays. I pop them out and store in a ziplock in the freezer, and then I can use them for soups, smoothies, etc, year round. I find this works pretty well, esp since I don’t have the funds available to get one of the higher end blenders.

Great tips! I always freeze carrots in the fall. I cut them in rounds and freeze them just like that. I love the ice cube try idea though. Anything to squeeze a few extra veggies in! Thanks for stopping by.
