During the summer we’re always working in the fields, or outside with the cows. These are the days when recipes have to be quick and easy to make the cut.
I’m telling you, this no bake icebox peach dessert makes the cut! It’s at the top of the list!
I love making this cake with homemade peach pie filling. If you don’t have time to make it use store-bought. Or, you can simply use sliced fresh peaches instead of pie filling.

What’s in an Icebox Cake
Icebox cakes usually have really simple ingredients. There’s always some kind of crust. Usually a graham cracker crust, Vanilla Wafer, or chocolate cookie crumb crust.
Then there is a filling. Sometimes it’s made with pudding, cream cheese, or whipped cream.
And for fruit icebox cakes there has to be some variety of fruit!
Here’s the rundown of ingredients in this icebox cake.
- Graham Crackers: Use vanilla wafers if you’d like.
- Whipped Cream: I suggest whipping fresh cream, but you can use whipped topping (Cool Whip) from the freezer section if you want.
- Peach Pie Filling: I love my homemade Peach Pie Filling but you can totally use store-bought if you don’t want to take time to make it from scratch. You can also simply use sliced fresh peaches in its place.
How To Make Ice box Cake

- Spread whipped cream in the bottom of a pan.
- Set a layer of graham crackers over the whipped cream layer.
- Spread with peach pie filling.
- Repeat layers two more times ending with whipped cream.
Little Dairy on the Prairie Pro Tip: As the icebox cake sits in the refrigerator the graham crackers will soak up some of the moisture from the peaches and the whipped cream and become like cake. Be sure to make the dessert ahead of time.

No-Bake Peach Icebox Cake
Equipment
Ingredients
- 18 graham crackers
- 8 ounces whipped topping see note
- 3 cups peach pie filling I used homemade, if you don’t have it you can use a store bought can
- 1 dash ground nutmeg for garnish
Instructions
- Use either homemade whipped cream (see note below) or whipped topping. Divide topping into four parts. Spread a quarter of the whipped topping to cover the bottom of a 9"x9" square pan.
- Layer graham crackers over whipped topping, breaking if necessary to make them fit.
- Spread another quarter of the whipped topping over graham crackers.
- Gently spread half of the peach pie filling over the whipped topping layer trying not to mix layers.
- Repeat steps 2, 3, and 4.
- One more (the third layer) of graham crackers.
- Finish it off with the remaining whipped topping.
- Sprinkle with nutmeg if desired.
Notes
- 1 1/4 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract

I just made this dessert this evening–so haven’t tried it yet. Will the graham crackers soften up a bit? (That’s just fine with me!). Unfortunately, the premium (?!) canned peach pie filling I used seems to contain more “goo” than peaches! So, if hubby & I consider this treat a winner, I may need to find a “peachier” filling! Has anyone tried using canned cherry pie filling?

Yes! The graham crackers will soften up as it sits in the refrigerator. Store-bought pie filling can be so good, or just a bunch of sauce with no fruit. I always make my own peach pie filling for that very reason. Using cherry pie filling would be divine! Good luck and let me know how it goes if you try cherry!

I’m not exactly sure where, or when the icebox cake was invented. Iceboxes were used as refrigerators in the olden days. This dessert is assembled, then refrigerated for awhile. I’m guessing that’s why they were called icebox cakes. As it sits the flavors all come together and magical things happen! I hope you enjoy it!

This is perfect for what I’m looking to do! I bought a can pf peach pie filling today and wanted to make something quick and easy to take on a road trip tomorrow with two littles (grandkids). Can you make this and freeze it for future eating?

I wouldn’t try freezing it because I think it would alter the textures in the icebox cake. The peaches would release too much juice and make it watery too. The good news is that it’s so quick and easy to make it’s really not a hassle to make it a little ahead of time! Enjoy!

This looks delicious and would like to make it tomorrow. How long should it be refrigerated before serving? Should the graham crackers still be a little crunchy or should they be softened by the whipped topping?

Hi Mary Beth! I let it sit in the fridge for at least 3 hours. Longer is fine too. AS it sits the whipped cream will soften the graham crackers creating a little base layer. I actually really love that layer!

I made this dessert for my son and I. It is very delicious. I used canned peaches and used your recipe to make peach filling. I used Swerve brown sugar substitute about 3/4th cups which made the filling sweet enough for our taste. I’ll definitely make this peach icebox cake again.
