Mississippi Pot Roast Recipe is the absolutely BEST slow cooker roast beef EVER! It’s made with 5 simple ingredients; roast, a package of au jus seasoning, a package of ranch seasoning, a jar of pepperoncini’s, and a cube of butter! The hardest part about this roast is getting it out of the crockpot without it falling apart! Now that’s a good problem if you ask me!
This recipe was updated in January 2019 to include new images and text. The recipe is the same, except I changed the name from Banana Pepper Roast and added instructions for cooking it in an instant pot and provided nutritional information. I’ve also learned sometimes this recipe is called Mississippi Mud Roast!
By now you probably all know that I am a carnivore. I just LOVE meat! And easy beef recipes are my very favorite!
I spent last weekend with my mom and sister and we had a blast together. We were busy shopping, visiting and catching up. So we ended up eating out the whole time I was there, which was fine with me. time for dishes. We ate some extra yummy pizza, which I will definitely be trying to recreate, sandwiches and Mexican food!

Original Mississippi Pot Roast Recipe
During the summer my sister-in-law gave me this recipe. I knew I had to try it for a few reasons.
- She isn’t a beef addict and she loved this, so I knew it had to be good.
- She had me all in when she said, “put a cube of butter on top of the meat”.
I made the recipe and it does not disappoint. It’s a fun twist on the traditional roast! We will definitely be making this one again, and again!
Tips and Suggestions
LITTLE DAIRY ON THE PRAIRIE TIP:
- Use a slow cooker liner to make clean up easy!
- For this recipe you don’t really need to seer, or brown, the roast.
- To make this recipe ahead of time, follow the recipe through step 4 then refrigerate it until it’s time to cook it. Sometimes I do this the day before and all that’s left is sticking it on the crockpot base.
Ingredients
- Roast– Chuck roast is my favorite (learn all about it in my classic roast beef recipe). You can use whatever roast you want. It’s gonna cook low and slow until it falls apart anyway. This is a good place to use those less expensive cuts of meat.
- Au Ju Gravy Mix – you only need the dry mix. Don’t prepare it.
- Ranch Dressing Mix – dry mix only. Don’t make it into a dressing.
- Banana Peppers or Pepperoncini Peppers – Either will work great! I use whatever is on hand. Banana peppers are a little milder, but pepperoncini peppers aren’t spicy or hot either.
Instructions
- Add a roast to the slow cooker.
- Sprinkle dry ranch seasoning mix and dry au jus seasoning over roast.
- Slice 1 stick (1/2 a cup) of real butter and set on top of the roast.
- Pour a jar of banana peppers or pepperoncini peppers plus a little of the juice from the jar in the CrockPot right next to the roast.
- Slow cook roast for low for 6-8 hours, or on high for 4-6 hours.
- Remove from the crock pot…it will probably fall into pieces when you try to get it out of the crockpot! Success!
- Let rest for 10 minutes.
- Shred with two forks.
Pot Roast vs Roast
Can you make Mississippi Roast in the instant pot? Of course!
Follow the recipe exactly as you would if you were making it in the slow cooker, except put everything in the pressure cooker instead. Be sure to add at least 1/2- 3/4 a cup of juice from the peppers so it will build enough steam to pressurize. Cook on high pressure for 90 minutes.
NOTE: I prefer making roast beef in the slow cooker vs. instant pot. It’s typically a bit more tender and I like being able to do the prep work earlier in the day, then sticking it on the crockpot and not worrying about it until dinner time.

Recipe for Mississippi Pot Roast
This roast couldn’t be any easier. It is perfect for Sunday dinner or those busy days when you aren’t home to get dinner ready. If you want to turn this roast into a one-pot wonder, add potatoes and carrots during the last few hours of cooking.
Banana peppers lend such a yummy flavor to this roast. And the butter makes it extra moist!
Mississippi Pot Roast Recipe – Slow Cooker
Ingredients
- 1 4 pound roast beef Chuck works great
- 1 package ranch dressing mix just the dry mix
- 1 package au jus gravy just the dry mix
- 1/2 cup butter
- 8 whole banana peppers or Pepperoncini Peppers
- 1/2 cup juice from banana peppers or Pepperoncini Peppers
Instructions
- Add a roast to the slow cooker.
- Sprinkle dry ranch seasoning mix and dry au jus seasoning over roast.
- Slice 1 stick (1/2 a cup) of real butter and set on top of the roast.
- Set 8 banana peppers or pepperoncini peppers plus a little of the juice from the jar in the CrockPot right next to and on top of the roast.
- Slow cook roast for low for 6-8 hours, or on high for 4-6 hours.
- Remove from the crock pot…it will probably fall into pieces when you try to get it out of the crockpot! Success!
- Let rest for 10 minutes.
- Slice or shred with two forks.

- Roast can be made in the instant pot. Be sure to add a little extra juice from peppers and pressure cook on high for 90 minutes.

I’m all about substitutions and I wish fresh banana peppers would work in this recipe. The juice from the jarred banana peppers gives the roast the best flavor! I’d wait until you have a jar of banana peppers or pepperoncini peppers! It’s worth the wait! I love this roast beef so much!

Last night was the first time I have made this recipe in the crock pot. I wanted it for Sunday lunch. I put it on at 11 pm last night on low, got up at 5 am to check on it. Most all the juices boiled over the crockpot onto the cabinet and floor. Please tell me what would cause this? My sister-in-law has had this very same problem. I followed the recipe to a t. I put only 1/2 cup of peperoncini juice, all other ingredients were dry and of course the butter. Please let me know what you think and wondering if anyone else has had this experience?

No it is a large size Hamilton Beech. This is the 1st time this has happened to me with a crockpot but it was also the 1st time I made the Mississippi Pot roast in it. I had it on low, just not sure what may have caused it to boil over.

I tried doing a roast this way and loved it too. Fast and Easy. I couldn’t find the banana peppers at the store I went to so I used a different kind. Now that I have seen the bottle you displayed I will know they can be found. Sure they would add a fun flavor to the roast.
