These roast beef sliders are a fun party food or perfect appetizer! They are also easy enough to make for a simple weeknight dinner.
Roast beef sliders are one of my favorite ways to use leftover roast beef. Since the meat is already made and ready to go it only takes about 40 minutes to assemble and bake the sliders! Plus, you can make them ahead of time and bake when you’re ready!
EASY Roast Beef Sliders
I make a Sunday roast several times a month. Roast beef is on the menu so often because the leftovers make weekday meals quick and easy! We turn leftover roast beef into French Dip Sandwiches, Shredded Beef Burritos, and Easy Shredded Beef Enchiladas.
These roast beef sliders with cheese are one of our favorite ways to use leftover shredded roast beef! Here’s what makes them so great:
- You need a few simple ingredients. This easy recipe is forgiving. Make it with whatever you have on hand. Use pulled roast beef or sliced deli meat.
- They’re loaded with flavor! The combination of
- Customize the sliders any way you like! Use pepperjack cheese to give them a spicy kick. Add grilled onions and mushrooms. The sky is the limit.
- Make a few or enough for a crowd. Making enough for a party, game night, or other celebration is easy. Or, make just a few for your family.
- Sliders can be made ahead. Assemble the sliders ahead of time and bake right before eating. Leftovers are pretty darn good, too.

Roast Beef and Cheese Sliders Ingredients
- Rolls: Hawaiian sweet rolls are the classic choice for making these sliders. They add a bit of sweet flavor. I’ve also used frozen Rhodes rolls and store-bought dinner rolls. Use what you have.
- Roast Beef: Homemade shredded roast beef is my favorite. Classic Slow Cooker Roast Beef, Melt in Your Mouth Pot Roast, and Mississippi Roast create tender roast beef that works great for making roast beef sliders. Sliced deli roast beef is fantastic.
- Cheese: American is the cheese I use most often for making sliders because it’s a melty cheese. Provolone cheese, pepper jack cheese, Swiss cheese, and cheddar cheese are good options. Use slices of cheese or shredded cheese.
- Mayonnaise
- Garlic: Garlic paste in a tube is easy to use and has great flavor. Find it in the grocery store in the refrigerator section by the fresh herbs. Or use garlic powder.
- Butter: Use real melted butter, it tastes a million times better than margarine. Dairy farmers, like me, appreciate the support!
- Brown Sugar: Optional, but I love the sweet salty flavor combo!
- Worcestershire Sauce: Adds a nice tangy flavor.
- Dijon Mustard
- Poppy Seeds: They are just for looks! Use sesame seeds instead.
Instructions
Let’s learn how to make roast beef sliders!
Step 1: Preheat the oven to 350 degrees. Prepare the baking dish by spraying a 9×13-inch pan with cooking spray, or line a baking sheet with aluminum foil or parchment paper. Lining the pan with parchment paper makes it easy to remove the cheesy roast beef sliders to a cutting board to cut after baking.
Step 2: Slice the Hawaiian rolls in half lengthwise using a serrated knife so the top half is one slab and the bottom half is another.
Step 3: Add the mayo sauce. Mix the mayo and garlic paste together. Slather it over the bottom half of the rolls.
Step 4: Add roast beef and cheese. Layer the roast beef and cheese over the sauce. Cover with the top buns.
Step 5: Brush with butter sauce. Melt butter in a small bowl in the microwave. Add brown sugar, Worcestershire sauce, and mustard. Whisk to combine. Brush the butter mixture over the top of the rolls. It’s a generous amount of butter sauce and that’s a good thing! Sprinkle with poppy seeds if you’d like. (You can also melt the butter in a small saucepan.)
Step 6: Bake. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for 5 more minutes. (To be honest, I forgot to cover my sliders when I put them in the oven. I baked them uncovered for about 20 minutes, then cover them and finished baking. They are a little too done for my liking, but they were still delicious.)
Step 7: Rest, cut, serve. Let rest for a couple of minutes (this helps keep the layers of roast beef in place). Move to a cutting board and cut the sliders into individual sandwiches.
- Cut the rolls so the bottom half is a little bit thicker than the top half.
- You can brush the top of the inside of the bottom half of the sliders with butter and broil for a couple of minutes until they are golden brown. Watch them close because they’ll brown quickly. Then assemble as directed.
Make Ahead Instructions
There are two options.
- Assemble the sliders and cover them with aluminum foil or plastic wrap. Refrigerate for up to 12 hours. Bake as directed. This method works great and is awesome because all you have to do is bake at the last minute. However, the sliders could be a little soggy on the bottom. My kids never complain about it!
- Prepare all of the components ahead of time and assemble them just before baking. You’ll need to reheat the buttery sauce for the tops of the rolls.
Variations on Roast Beef Sliders
It’s so fun to switch this slider recipe to excite your taste buds! Here are a few ideas to get you started!
- Cheese: Use any variety of cheese you like. Just make sure it’s a good melting cheese.
- Veggies: Add caramelized onions, mushrooms, and green peppers.
- Sauce: Add a little horseradish sauce to the mayo/garlic sauce. My family doesn’t like horseradish so I leave it out.
- French Dip Sliders: Make au jus sauce to serve with the sliders.
How to Store Sliders
Store leftover sliders in an airtight container in the refrigerator for up to 3 days.
To reheat sliders either warm in the air fryer, bake in the oven, or microwave until heated through. I typically reheat sliders in the microwave. They won’t have that crusty top, but they’ll still be delicious. It’s faster than takeout and better too!

Or, bake frozen sliders covered with aluminum foil at 325 degrees for 20 minutes. Remove foil and bake for 5-10 more minutes, or until warmed through and the tops are golden brown.
