This is one of my very favorite meals. Here are some reasons Slow Cooker French Dips Sandwiches are one of my favorite meals;
1. I love BEEF!! (And I happen to have a whole freezer full of it)
2. These sandwiches are the perfect amount of gooey cheese, salty, and hearty beef.
3. I throw it in the slow cooker and don’t have to worry about dinner the rest of the day.
4. My whole family loves them. You can’t beat a meal like that.
You can use any old roast that you happen to have in your freezer. I bought this one and it was one of the more less expensive roasts. Any roast will work perfectly.
Season both sides of the roast generously with Kosher salt and coarse black pepper. Put the roast and about a cup of water in a slow cooker and cook it on high for 4-5 hours or on low for 8-9 hours.
It should be very tender and falling apart at the end of the cook time. Shred the roast with two forks. From here you can either choose to make your own au jus sauce or you can make up a little package of au jus sauce, then return shredded roast to slow cooker and pour ah jus over the roast. Let is simmer until its time to eat.
If you choose to make your own au jus, start by sauteeing half of an onion in a little olive oil.
Add liquid from the slow cooker, beef broth, garlic and seasonings to the onions. Let simmer for a few minutes.
Pour all the ah jus in a blender. Blend it until all of the onions are pureed. Add a little Kitchen Bouquet (it adds color) and a Tablespoon of flour. (I know this picture looks terrible, but that juice is delish)
Return the shredded roast to the slow cooker. Pour the ah jus over the roast. Let it warm on low heat until ready to serve.
Here’s how you assemble these beauties.
1. Sautee sliced onions, peppers and mushrooms are delish too. (If you know you are going to be in a hurry at dinner do this earlier in the day.)
2. Slice some cheese. We used baby Swiss. Experiment with different kinds, or use lots of different kinds at the same time. The more cheese the merrier. (You could do this earlier in the day too.
3. Butter and broil hoggie buns until they are toasted. (If you know you are really going to be in a hurry at dinner time, butter the buns earlier in the day.)
3. Using slotted spoon, scoop some roast beef out and put it on the bottom half of the bun. (Sorry you can’t do this earlier in the day.)
4. Spoon some onions over the beef. Put lots of cheese on the top bun.
5. Put the whole thing under the broiler just until the cheese is melted. Watch it close, it can burn so easy.
6. Cut them in half, on a diagonal because it is cuter, and because that little pointy part fits in your mouth better.
7. Serve with Au Jus on the side.
This can be a really fast meal. And if you prepare most of the “stuff” ahead of time it is quick to pull together. You must make these sandwiches soon. They really are that good.
Slow Cooker French Dip Sandwiches with Au Jus
Ingredients
- 1 roast whatever cut and size you want
- Kosher Salt and pepper
- Olive Oil enough to sauté
- 1/2 diced onion
- 1 teaspoon garlic minced
- 1 Tablespoon Worcestershire sauce
- 2 1/2 cups beef broth
- 1 1/2 teaspoon Kosher salt
- 1/2 teaspoon pepper
- 1/4 teaspoon thyme
- 1/4 teaspoon rosemary
- 1 teaspoon flour
- 2 Tablespoons Kitchen Bouquet
- 1/2 onion sliced
- 2 Tablespoons butter
- Sliced Swiss Cheese
- Hoagie Buns
Instructions
- Generously season both sides of roast with salt and pepper. Put roast and about 1 cup of water in a slow cooker. Cook on high 4-5 hours or on low 8-9 hours.
- Remove roast from the slow cooker and shred.
- Sautee diced onions in olive oil. Add juice from the bottom of the slow cooker, beef broth, garlic, Worcestershire sauce, rosemary, thyme and salt. Let simmer for about 5 minutes.
- Pour the au jus in a blender. Blend until the onions are pureed. Add Kitchen Bouquet and flour and blend again.
- Return shredded roast to the slow cooker. Pour au jus sauce over roast. Let it cook on low until ready to serve.
- Sautee sliced onions in butter.
- Butter Hoagie Buns and broil until toasted.
- Drain roast with a slotted spoon and put on the bottom of hoagie bun. Layer sautéed onion over roast. Cover the top of the hoagie bun with sliced cheese. Return sandwiches to the broiler just until cheese is melted.
- Ladle au jus into little mugs for serving and serve next to sandwiches.

These are super yummy. Just like you said, they are a hit because you can leave the roast in the crock pot all day long, throw in the other stuff and impress the family for dinner that night. Love em. Going to make them soon.
