I’ve been making this frozen dinner roll recipe for years, but I recently updated it to make it quicker and even easier to make! You’re welcome!
I used to leave the frozen rolls whole, but I’ve decided that it’s even better (I’m wasn’t sure that was possible, but it is) to cut them into quarters. That means more cheesy, buttery, goodness on each roll! YUM!
Let me share all the tricks I’ve learned! Plus, I’ll give you a few suggestions for substitutions just in case you don’t have everything on hand.

Simple ingredients is all you need for easy dinner rolls
The ingredients for this recipe are simple and easy to keep on hand.
Let’s go over options for substituting if you don’t have everything on hand and don’t want to make a trip to the grocery store…or if the store is over 50 miles from your house and it’s out of the question!
- Frozen Dinner Rolls – Rhodes frozen dinner rolls are my go-to because they taste like homemade without the hassle. You can use whole wheat, white, or even a loaf of frozen bread dough to make rolls.
- Butter – no substitutes, just use the real thing. Salted or unsalted is fine.
- Italian seasoning – If you don’t have it use 1/2 tsp. of each parsley, oregano, and basil.
- Garlic – Garlic paste is my fave because it lasts a long time in the fridge and it’s so easy. You can also use garlic cloves, or if you’re really in a pinch use 1/2 tsp garlic powder.
- Salt – Regular table salt, sea salt, or Kosher salt.
- Parmesan Cheese – Grate it yourself or use the stuff in the can.
How to make frozen Rhodes dinner rolls
You guys, life doesn’t get any easier than this recipe!
And it’s a good thing because I’m going to be stuck in a tractor the whole week and need at least one easy thing in my life this week!
I’ve got two options for you; overnight dinner rolls, or quick rise dinner rolls. Both are fantastic options.
Let me walk you through the steps of each.
How to make overnight dinner rolls (refrigerator rolls)
This is a great option if you have more time earlier in the day and won’t be home right before dinner, but still want piping hot, fresh rolls for dinner.
I’ll break down the step by step instructions for you!
- Grease a 9-inch baking dish with non-stick baking spray.
- Thaw frozen rolls in the microwave for 2-3 minutes or until rolls are barely soft enough to cut. Cut rolls into quarters (kitchen shears are the easiest way to cut them). Set in greased baking dish.
- Melt butter in the microwave, about 30 seconds. Add Italian seasoning, salt, and garlic. Stir.
- Pour melted butter mixture over rolls in the prepared baking dish. Toss to coat.
- Sprinkle half of the Parmesan cheese over rolls. Gently toss to coat.
- Sprinkle remaining cheese over rolls.
- Tightly cover the baking pan with plastic wrap that has been sprayed with non-stick baking spray.
- Refrigerate overnight (or during the day). In the morning (or later in the day) the rolls should be about doubled in size.
- Remove rolls from the fridge and let sit at room temperature for about 15 minutes.
- Preheat oven to 350 degrees.
- Bake rolls for 20-25 minutes.
- Brush with additional butter, and sprinkle with extra cheese if you want! Trust me you want to!

Why does it seems like you have to scroll over and over through page after page just to get to the recipe I wish people would load the recipe and directions 1st and then talk about all that nonsense later..

It’s my goal to make sure even beginner cooks and bakers can successfully make my recipes on the first try. I like to share all my tips and tricks I’ve learned. There is a “jump to recipe” button at the top of each post and it will jump you straight to the printable recipe. It sounds like that might a better way to get the recipe.

I have a 2 qt measuring microwave safe cup. I fill half way with water and microwave about 2 1/2 minutes or until simmering. I put the prepared rolls in a pie tin and set on top of the hot water for about an hour

That’s a great idea for getting frozen rolls to rise faster! Thanks for sharing!

Following your overnight directions for the Italian cheesy rolls, I found that my rolls had not doubled in size this morning. It is 1:30 Central time. Do you think they will rise before we eat at 6:00? I took them out of the refrigerator and set them on the counter top. It is not warm in the kitchen. Help!
Amy Engberson says
I’m sorry it’s taken me so long to respond. I’ve been out of the office for a few days. I’m guessing the rolls had plenty of time to rise before you needed to bake them. You can always speed the rise time by turning the oven on to the lowest temperature, then turn it off and add the rising bread to the oven. Be sure it’s covered with plastic wrapped sprayed in nostick baking spray to make sure it doesn’t dry out. The warm oven will speed the rising process along!
Marie says
I let them rise on the counter covered with plastic wrap or a kitchen towel. I also use a large cast iron pan to rise and bake the rolls. It makes them extra special!!
Just take them out 6-8 hours ahead of time
Amy Engberson says
I bet they are amazing baked in a cast iron pan! All the buttery goodness makes these rolls extra special!
