Which oats for no bake cookies?
How do you know which oats to use when you’re making no bake cookies with oatmeal?
I always use quick oats or rolled oats because it’s what I have on hand and they work perfectly. They are a little finer oats and aren’t quite as chewy as steel-cut oats.
Can you use steel cut oats (sometimes called old fashioned oats) for quick oats? Yes! Steel cut oats are less processed and less chopped than rolled or quick oats. That’s why steel-cut oats have bigger oats and will be a little chewier.
It’s a personal preference. You can substitute quick oats, old fashioned oats, steel cut oats, or rolled oats interchangeably in oatmeal cookies.
Why do my no bake cookies turn out gooey?
Most of the time no bake cookies turn out too soft if the butter/sugar mixture didn’t boil long enough before adding oats.
For this caramel apple cookies recipe, you’ll want to bring the mixture to a full rolling boil, and let it boil for 30 seconds before adding the oats. What’s a full rolling boil? It’s when the mixture continues to boil even while you stir it.
What can I do if my no bake cookies won’t harden?
Once caramel apple no bake cookies, or any other no bake cookies, have been scooped onto a sheet and cooled it’s tricky to make them set up.
The best thing to do is to refrigerate them for a few hours. They will get harder the colder they are. In fact, you can freeze no bake cookies too.

No Bake Caramel Apple Cookies
Ingredients
- 2 c. sugar
- 3/4 c. butter
- 2/3 c. evaporated milk
- 1 tsp. vanilla
- 3/4 oz. pkg. instant caramel pudding
- 3 1/2 c. oats
- 1 c. chopped dehydrated apples
- 1/2 c. toffee chips optional
- 1 c. white chocolate chips optional
- sea salt to taste
Instructions
- Measure dry ingredients and set aside.
- Line a baking sheet with parchment or wax paper.
- Bring butter, sugar, and milk to a full rolling boil over medium to medium high heat stirring frequently. As soon as mixture comes to a full rolling boil remove from heat.
- Add vanilla. Stir.
- Add oats, apples, and dry pudding mix. Stir to combine. Let sit for about 15 minutes.
- Add white chocolate chips and toffee chips if desired. Stir.
- Drop cookies onto prepared baking sheet. Sprinkle with sea salt.
- Let rest until completely cooled. Store in an air tight container.

Can I substiture fresh apples for dried in your No bake apple cookie recipe?

I haven’t ever tried using fresh apples so I’m not sure how it would work. I’m afraid it will add extra moisture to the cookies and make them softer, but you could try it. Maybe you could add the chopped apples to the butter, sugar, and evaporated milk mixture. Cooking the apples would help soften them and cook a little of the liquid out. Let me know how it goes if you try it!

They used to make caramel pudding and I can’t find it in the grocery store anymore either. You can use butterscotch pudding and it will work great.

Steel cut oats and old fashioned oats are NOT the same things. Old fashioned oats are rolled oats left in whole pieces., but they are rolled flat. Steel cut oats are NOT rolled flat. They are the oat grain that has been cut into smaller pieces. The quick oats you reference are rolled oats that have been cut into smaller pieces. Because they have been cut into smaller pieces, they cook faster, thus the name quick oats.
