You know we live on a dairy farm and that means we very rarely eat a meal that doesn’t include cheese! I’ve never made a BLT sandwich without cheese, because why would you? Cheese makes everything better!
One day we didn’t have any bread and I really wanted a BLT. Going to the grocery store isn’t always an option since the closest one is about 50 miles from the farm. But, I did have tortillas and that’s when we discovered how delicious Bacon Cheese Quesadilla is!
Ingredients for making Quesadillas with Bacon
- Tortillas – I like flour, but you can use corn tortillas if you’d like. It’s a great gluten-free option.
- Cheese – cheddar, pepper jack, Colby jack, and Monterey are all great options. Grated cheese is best. Freezing cheese is easy then you’ll always have it on hand
- Butter – real butter is the BEST
- Bacon – we love cooking bacon in the oven and saving leftovers for recipes like this. You could also use store-bought bacon crumbles.
- Ranch Dressing – optional, but amazing
- Lettuce and tomatoes – serve with the quesadillas
- Chicken – optional, reminds me of chicken bacon quesadilla from Chili’s
How to Make Bacon Quesadillas
STEP 1: Heat a skillet over medium heat and melt butter in the skillet
STEP 2: Add a tortilla to the skillet. You can use flour or corn.
STEP 3: Add a layer of shredded cheese, diced bacon, and a drizzle of ranch. Add sliced grilled chicken to Chili’s bacon chicken ranch quesadilla.
STEP 4: Add a tortilla to the top.
STEP 5: Cook tortilla until it’s golden brown. Flip, and cook the other side until it’s also golden brown.
STEP 6: Remove from the skillet, let rest for about a minute. Cut into wedges and serve hot! Top with shredded lettuce, tomatoes, and ranch dressing!

Once you start eating quesadillas you’ll probably become hooked! They’re best if you eat them fresh, but I’ve heard you can freeze them, then stick them in a frying pan to crisp them up again. Since they only take a few minutes to I prefer to make them fresh!
Oh, and I’ve read so much about quesadilla makers. I’m sure they have their place, but to be honest, I really prefer using my cast iron skillet. {affiliate link} It heats evenly and is a breeze to clean up! Plus I don’t have to store one more gadget that can only be used for one thing!

Bacon Quesadilla
Ingredients
FOR THE QUESADILLAS
- 1 flour tortilla
- 1 tsp butter
- 1/4 cup grated cheddar cheese
- 1/4 cup bacon
- 1 Tbsp ranch dressing
TOPPINGS FOR SERVING
- 1/2 cup lettuce
- 1/3 cup diced tomatoes
Instructions
FOR THE QUESADILLAS
- Melt butter in a skillet over medium heat. Be sure to use medium heat so the insides of the quesadilla will melt before the outside burns.
- Place one tortilla in skillet.
- Sprinkle cheddar cheese over tortilla in the skillet. Add crumbled bacon. Drizzle with ranch dressing.
- Top with remaining tortilla.
- Cook until the bottom of the quesadilla is golden brown. Then flip and repeat on the other side. It usually takes about 5 minutes.
- Remove quesadilla from the skillet and transfer to a cutting board. Let rest for about a minute then cut in wedges.
- Serve with shredded lettuce and diced tomatoes. You can also dip them in extra ranch if you'd like!
