When we have parties I always get stuck on what to serve for drinks. I’m a super practical person. My though process goes something like this…what color stain can I get out of the carpet the easiest? How sticky will the spill be on my hardwood floor? How expensive is this drink going to be to serve? Can I make it ahead? How many miles will I have to run to get rid of this? I try to let it go (did you just sing that?). That’s when I go buy a case of water bottles. No stains, cheap, no sticky mess, made ahead and no running! Water is the perfect drink, just not for a party!
After I let it go for a minute I decided to try making Sparkling Apple Cider Floats for New Year’s Eve! It’s sort of a no brainer that our drinks should include ice cream. After all, we buy it in the big huge 2 ½ gallon boxes because everyone in my family is an ice cream addict! I’m telling you, vanilla ice cream is pretty good floating in sparkling cider too!
I really am a cheapo. I wasn’t about to use bottles of sparkling cider for my floats. No way. That’s too expensive and would give me a heart attack! I made my own using lemon lime soda and apple juice. I think it might have even been better because I added extra soda, for the kids!
Let all the reasoning go today and make your family some Sparkling Cider Floats! They will love you for not being too practical. They do mop up pretty easily!

Sparkling Cider Floats
Ingredients
- 12 oz. lemon lime soda
- 2 cups apple cider
- 2-3 cups vanilla ice cream
- 2 T. caramel ice cream topping
- sea salt
Instructions
- Scoop ice cream into two serving glasses.
- Pour half of the soda and apple cider over the ice cream in each glass.
- Drizzle Caramel on top.
- Sprinkle sea salt on top of caramel.
- Serve immediately!
