The other day I decided to make my boys really happy and make cornmeal pancakes. I started whipping them up when a really good idea came. I had some fried and crumbled sausage in the fridge. I remembered how much they like to put maple syrup on their sausage. Ah ha!! I put the sausage in the pancakes. And then because I very rarely make a meal without dairy products I decided to add some cheddar cheese.
Oh my!! These pancakes were so dang good. Besides being so good, it was an easy way to give my meat loving boys some meat. It didn’t require any extra dishes (yeah for me) and no extra steps (yeah for hungry meat loving boys).
Mix cornmeal, flour, soda, salt and sugar together.
P.S. I grind my own cornmeal. I grind popcorn to make the cornmeal because it is sweeter. I grind it very finely because I like that texture better. But if you don’t have a grinder, just use store bought cornmeal. It will be fine.
Beat eggs.
Add buttermilk and milk to eggs.
Add oil to other wet ingredients.
Stir dry ingredients into wet ingredients. And this is where I got so excited about my new idea that I forgot to take pictures. Add about a cup of fried and crumbled sausage. Add about a cup of shredded cheddar cheese. Stir in.
Cook pancakes on lightly greased griddle over medium to barely high heat. Flip and cook until done.
We served these pancakes with butter and maple syrup. It was perfect.
I asked my boys what to name this recipe. They said, “Freaking Awesome, Dang Good Pancakes with Sausage and Cheese in Cornbread Pancakes”. They are no help. So, make Sausage and Cheddar Cornmeal Pancakes in the morning. You won’t be sorry.
Sausage and Cheddar Cornmeal Pancakes
Ingredients
- 1 cup cornmeal
- 1 1/2 cups flour
- 1 1/2 tsp. soda
- 1 tsp. salt
- 2 Tbsp. sugar heaping
- 2 eggs
- 1 1/2 cups buttermilk
- 1 cup milk
- 1/2 cup oil
- 1 1/2 cups fried and crumbled sausage
- 1 cup shredded cheddar cheese
Instructions
- Mix cornmeal, flour, soda, salt and sugar. Stir to combine.
- Beat eggs. Add buttermilk, milk and oil.
- Stir wet and dry ingredients together.
- Stir in sausage and cheese.
- Drop pancakes on a lightly greased griddle, over medium to barely medium high heat. Cook on first side and flip. Cook until done.
- Serve with butter and maple syrup.

That combination of cheese, sausage and pancake looks completely delicious. This is a meal i cannot wait to try. Gonna pick up the ingredients and give cooking it a try

Yay! Some people think all of these different flavors together sounds so strange. I’m telling you they belong together, they are meant to be! Maybe I will make this for breakfast tomorrow!
