Easy Beef Burrito Skillet is a homemade one-pan meal the whole family will love! You can serve it as a “naked” burrito and eat it straight from the skillet, or you can add the filling to tortilla shells to make more traditional beef burritos, make burrito bowls, top lettuce with it to make a salad, or serve it over chips to make ground beef nachos!

Skillet meals are great for last-minute meals!
Most of the time I choose to make meals in the slow cooker because I love the convenience of being able to do all the prep work earlier in the day, and not having to worry. All that’s left is taking the lid off the slow cooker when it’s time to eat.
There are those days when dinnertime is right around the corner and I NEED a meal pretty much right now. That’s when one pot, one pan, one dish…whatever you want to call them, meals come in incredibly handy!
20-minute skillet meals…how to prep ahead of time!
Yes! This can be a 20ish minute meal with a little tiny bit of planning ahead.
- Make rice ahead of time. I always make extra when I’m making rice and then I’ll have it ready to pull out of the fridge when I need it. This is the only way to include rice in this recipe and keep it in the super-fast category. Substitute regular rice for my Cheesy Slow Cooker Spanish Rice to up the flavor a little.
- Either buy pre-grated cheese or better yet check out my Cheese Guide for tips on the fastest way to grate cheese and the best way to store it.
How to make Easy Beef Burrito Skillet into a keto approved meal
Here’s my disclaimer. I’ve never followed the keto diet and probably never will because I love Spudnut Cinnamon Rolls and Soft Chewy Snickerdoodle Cookies waaaay too much! But my husband did try this diet for a period of time and so I learned a little bit about it.
To make it keto omit the corn and rice.
I’ve heard kidney beans are allowed on the keto diet. Substitute pinto beans for kidney beans.
What are naked burritos and how do I serve them?
They are called “naked” burritos because they aren’t wrapped up inside a shell. They are hanging out for the whole world to see! Basically, it’s a dressed-up version of burrito filling.
We like to eat this easy meal dished straight from the skillet! Of course, it’s delicious when it’s topped with ALL the fixings; tomatoes, avocados, cilantro, sour cream, cheese, olives, etc.
How to make this recipe into a traditional burrito, burrito bowl, or salad.
Don’t you love meals that come with LOTS of options! If you have picky family members, you’re probably loving this idea as much as I do! One kid won’t touch anything green and that completely rules out salad. Another won’t eat corn tortilla shells. Gah!
With this recipe you have plenty of options!
- Spoon the filling in a tortilla shell, add plenty of grated cheese, and microwave or bake it until it’s warm through.
- Add a tortilla shell to a bowl and spoon filling on top. Top with favorite toppings.
- Spoon in a bowl and add crushed tortilla chips.
- Make a bed of lettuce on a plate and top with filling, favorite toppings, and ranch or other Mexican flavored dressing.
- To make nachos layer chips, grated cheese, and filling on a platter and bake until cheese is melted. Top with your favorite toppings.
There you go! Something for everyone!
What’s happening on the farm!
We’ve been cleaning the farm like crazy! It’s a dang good thing too because I was getting really tired of it looking like a junkyard. Here’s the problem. There’s always something to do on a dairy farm. We never, never, never wake up and wonder what we are going to do to keep ourselves or our employees busy for the day. There’s more to do than we can possibly accomplish.
And you know what gets neglected? Cleaning up after ourselves on the farm. To be honest there are only two clean people that live in this house; Branson and me. The other three don’t even notice it looks like a disaster area.
This year though, we decided instead of starting another new project we’d clean up the messes we’d already started. I’d say we’re about halfway there and I’m really crossing my fingers and hoping it’s not the end of the project.
We’re back in crops so it’s going to have to wait for a bit, I know that. But…. I’m going to start praying this isn’t the end. Your prayers would be appreciated! It might take a deep spiritual impression to get Justin to keep on throwing away his treasured junk! What I’m saying is we need divine intervention! Wish me luck!

Easy Beef Burrito Skillet
Ingredients
Ingredients For the Burrito Skillet
- 1 pound hamburger
- 1 15 oz pinto beans drained
- 1 1/2 cup cooked white rice
- 1 cup corn kernels
- 1 cup beef broth
- 1/2 cup salsa
- 1 Tbsp chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
Optional Burrito Toppings
- avocado diced
- tomatoes diced
- green olives sliced
- cheddar cheese grated
- cilantro chopped
- sour cream
- tortilla chips crushed
- tortilla shells for serving
Instructions
- Cook and stir hamburger over medium high heat until it’s cooked through and crumbled. Drain if necessary.
- Stir in beans, rice, corn, broth, salsa, and spices.
- Reduce heat and continue stirring and cooking for about 5 minutes.
- While burrito mixture is cooking prepare optional toppings.
- Serve warm with your favorite toppings.
Notes
- I like to cook rice in advance and keep it in the refrigerator so it’s easy to add to recipes like this. You can also use steam in a bag rice {affiliate link} if you’d rather.
