Not only is does this Perfect Fresh Fruit Salad look like eye candy, it tastes ever better than candy too! It has just the right amount of sweetness while allowing all the fresh fruit flavors to shine!
Winter time fruit choices consist of either not eating fruit, eating fruit that tastes like cardboard or settling for canned fruit. The other day I was standing in the produce isle at my favorite grocery store. I felt like a kid in the candy store. There were fruits of every kind and color! I couldn’t decide on my favorites so I ended up buying a little bit of all of them. It looked like such a good idea at the time. Then I got home and wondered how I was going to consume all this fresh fruit before it went bad.
Not to worry! I rarely throw food away. I always think of a way to use it up. Fruit is easy because it can be thrown into a smoothie, added to Jello or sent in a lunch box. I couldn’t bring myself to grind all this delicious fruit into a smoothie. Besides, I was craving fruit salad anyway.
After scouring Pinterest for a few minutes I settled on making this fruit salad. I combined a few different recipes together to come up with this. I didn’t want the sweetness of the dressing to overpower the fresh healthy taste of the fresh fruit. This fruit salad is spot on. It has just a touch of sweetness while letting all the fresh fruit flavors shine through.
Powdered sugar draws some of the juices out of the fruit making the most amazing syrup. A squeeze of lime and a splash of vanilla balance everything out.
I made this fruit salad to serve next to these Ham and Cheese Sliders for breakfast. I hid a cupful of salad from my boys so I could eat it for lunch. Usually, I don’t like fruit salad that has been sitting around for a few hours. I’m picky, I know! This fruit was still so yummy. In fact, I think it was even sweeter and more flavorful at lunch time. Ahh, I’m a happy girl!
Now I have to decide if I’m going to serve it with my Easter Brunch or Easter Dinner? Hard decisions right?
