Easy Beef Burritos is one of those recipes you are going to want to save for those beyond crazy days when you need something to impress the kids and you need it in a hurry! If you are like my family those days happen about five times a week, which is about how often we eat these burritos!
Let’s face it everyone needs a few quick and easy recipes up their sleeves. We all have them. Some of them are so simple to throw together they hardly qualify as a recipe at all. Who cares they get the job done.
Pepperoni Pizza Sliders, Hawaiian Pulled Pork Nachos, and Philly Cheesesteak Quesadillas are a few favorite quick, throw it together type meals we go to again and again.
Beef and Bean Burritos – Let me show you how!
Beef Burritos literally take only a few minutes to throw together, especially if you always have ground taco meat in the fridge already to go. That is seriously one of my favorite lifesavers. If you already have taco meat in the fridge you are set to make taco salad, tacos, nachos, or these awesome beef burritos!
The beans:
- Brown ground beef and add a package of taco seasoning as package directs. Like I said this is almost always already done and sitting in my fridge which makes this process more like 5 minutes from beginning to end!
- Lay tortillas out flat, use as many as you have hungry people to feed!
- Open a can of refried beans and spread some beans down the edges of each tortilla.
The beef:
Spoon ground beef over beans.
The Cheese:
- Sprinkle lots of cheese on top. You could use pepper jack, Colby jack, Monterey Jack, or good old cheddar. Just use lots!
- Tuck the edges over and roll them up.
- Place burritos seam side down on a microwavable plate.
- Microwave for a minute, or until warmed through.
Easy as that!
Easy Beef Burritos are just the thing for quick lunches, rushed dinners, or even for sending to school with the kids in their lunchboxes! All it takes is 4 ingredients and about 15 minutes and you’ve got dinner ready!
The crazy thing about Easy Beef Burritos is that whenever I make them my kids act like I just hung the moon. Seriously, I’m not even kidding….they LOVE these things! I don’t know about you but I can’t live without recipes like this! By the way, don’t tell the kids how easy they are to make…let ’em think you hung the moon!

Easy Beef Burritos
Ingredients
- 1 can refried beans
- 1 pound ground beef browned
- 1 package taco seasoning
- 8 flour tortillas see note
- 1 cup grated chedder cheese more is always better!
- sour cream optional
- chopped cilantro optional
- diced tomatoes optional

- Garnish with sour cream, cilantro and tomatoes if desired.
- NOTE:
- This recipe is easy to make a few or several burritos at one time. If I'm making just a few and have leftover beef and beans I stick them in the fridge for another day.

The only thing I do differently with your beef/bean burritos is to add a spoonful of Pace Salsa or Picante sauce before wrapping and heating…very good

I make these often but I put them in a casserole dish then In the oven for a about ten minutes. Before baking I spread salsa, more cheese and chopped green onions across the burrito rolls. This gives a nice crispness to the tortilla.
