poached egg

slice
French Bread
butter

slices
mozzarella cheese
1/2 to

diced
1/2
t.
fresh basil
julienned
Bruschetta Vinaigrette:
1
T.
balsamic vinegar
1
t.
olive oil
dash salt
a little freshly ground black pepper
Instructions
Poach egg.
Toast French bread either in toaster or butter and broil.
Layer sliced cheese over toasted bread. Melt under broiler, or in microwave.
Top bread and cheese with poached egg.
Sprinkle with diced tomatoes and basil.
Drizzle with Bruschetta vinaigrette.
Serve immediately.
