No Bake Compost Cookies

No Bake Compost Cookies is a super easy dessert recipe that’s sweet and salty thanks to a handful of simple ingredients; potato chips, pretzels, graham crackers! Ingredients

  • 1 cup cornflakes roughly crushed
  • 1 cup potato chips coarsely crushed
  • 1 cup graham crackers coarsely chopped
  • 1 cup pretzels coarsely chopped
  • 2 1/4 cups semi-sweet chocolate chips
  • 3/4 cup peanut butter I like chunky

Instructions

  • Line a baking sheet with parchment paper. Set aside.
  • Chop whatever add-ins you want in your cookies. Scour the pantry. You’ll need 4 cups.
  • Combine peanut butter and chocolate chips in a microwave-safe bowl.
  • Microwave for one minute. Stir. Continue microwaving and stirring in 30-second intervals until chips are completely melted and smooth.
  • Add chopped add-ins. Stir to combine.
  • Scoop with a medium sized cookie scoop forming cookies.
  • Refrigerate for about 30 minutes.
  • Store in an airtight container in the refrigerator.

Notes

My favorite part about this recipe is that you can use whatever add-ins you like as long last they add up to 4 cups.
Measure add-ins after they have been chopped, crushed, etc.
These cookies are best stored in the fridge.
