Cheesy Crockpot Corn is sweet corn that's tossed in a creamy, cheesy sauce and cooked in the slow cooker! It's as easy as adding the ingredients to the crock pot and letting it cook! It's one of my favorite corn side dish recipes.
Spray the Crockpot with nonstick baking spray or line it with a slow cooker liner.
Add corn, butter, heavy whipping cream, salt, and pepper to the slow cooker. Add any optional add-ins such as cooked and crumbled bacon, diced peppers, diced jarred jalapenos, etc. Stir.
Cook on low heat for 2 1/2 hours.
Add a block of cream cheese and grated cheese. Stir.
If the cheesy corn is too thin sprinkle a Tablespoon of all-purpose flour over the corn and stir to combine.
Cook for 30 more minutes.
If desired pour into a serving dish and top with chopped fresh herbs.
Notes
Canned or fresh corn may be used for this recipe. One fresh corn cob typically yields about 3/4 a cup of corn. You'll need about 4-6 ears of corn for this recipe.Grated cheddar, Monterey jack, pepper jack, and mozzarella are all great cheese choices.
