Mexican Mac and Cheese {Plus Stock the Pantry Hacks}
Mexican Mac and Cheese is one of "grab a few ingredients from the pantry" kind of meals! It's quick and easy and of course kids go crazy for it!

- 1 box macaroni and cheese plus ingredients to prepare as directed on the box
Make mac and cheese according to package instructions.
Add ground beef or canned chicken if you really want to keep it to a pantry meal.
Add taco seasoning, and sour cream.
You could stop right there and eat this as is, or you can put it in a baking dish.
Top with a little, or a lot of grated cheese,
Sprinkle crushed corn chips over the casserole.
Bake at 350 degrees just until the cheese is melted, the casserole is warmed through, and the chips are a little browned. I baked mine for 10 minutes.
