Butterscotch bar cookies is an easy recipe you can mix up in about 5 minutes and then bake! They're buttery and chewy bar cookies filled with butterscotch morsels and chocolate chips that are sure to satisfy your sweet tooth! The rich buttery flavor in these bars will leave you begging for more!
Preheat oven to 375 degrees. Grease a half sheet rimmed baking pan (typically 15 1/2" x 10 1/2"). Set aside.
Melt butter in a microwave safe mixing bowl. Add cake mix, eggs and brown sugar. Mix until combined.
Add chocolate chips and buttersotch chips. Stir until completely incorporated.
Spread batter in prepared baking sheet.
Bake for 18-20 minutes. Watch carefully the last two minutes of baking. The cookies should be golden brown, but don't overbake! If anything error on the side of underbaked!
Cool. Cut in squares. Serve. Store leftovers in an airtight container.

You can substitute other kind other varieties of chips for the butterscotch and chocolate chips. Be sure they add up to a total of 2 cups. Fun ideas include:
