Red velvet cookies from cake mix are everything you love about red velvet cake, in a thick and chewy cookie! Using a box of cake mix means you'll only need 4 simple ingredients to make these chewy cookies! Such an easy recipe!
Step 1: Prep. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
Step 2: Mix. Slightly cooled and melted butter and eggs into a large mixing bowl. mix until combined. Use an electric mixer to cream. Add the cake mix and mix only until combined. Add chocolate chips. Stir to incorporate.
Step 3: Shape. Using a cookie scoop make 2 tablespoon sized cookie dough balls. Place on the prepared cookie sheet about 2 inches apart. Press extra white chocolate chips in the tops of the cookies if desired.
Step 4: Bake. Bake for 7-9 minutes. The cookies will be slightly jiggly in the centers. Let cool on the cookie sheets for about 5 minutes. Then transfer to a wire rack to completely cool.

Cake mix sizes can vary and might be slightly different. It will still work.You can use a mild-tasting oil like canola or vegetable oil instead of butter. I do love the rich flavor of butter. To make red velvet crinkle cookies roll the cookie dough in powdered sugar before baking. Store cookies in an airtight container for up to 4 days.
