Peanut Butter Popsicles are the BEST summer snack and one the kids go crazy for! This frozen peanut butter dessert has layers of chocolate too! Plus they're made with Greek yogurt so you can feel good about getting extra protein!
Add chocolate chips to a microwave-safe bowl. Microwave for one minute. Stir. If the chocolate isn’t completely melted microwave for 15 more seconds, then stir. Repeat until the chocolate is smooth. Set aside to cool until it’s still stirrable but cooled.
Add peanut butter chips to a microwave-safe bowl. Microwave for one minute. Stir. If the chocolate isn’t completely melted microwave for 15 more seconds, then stir. Repeat until the chocolate is smooth. Set aside to cool until it’s still stirrable but cooled.
Divide the yogurt in half and add half to each bowl of chocolate chips. Stir until smooth.
I like to add the Greek yogurt mixture to a sealable bag and snip one corner off then squeeze it into the molds. Mixture can also be spooned into molds.
Add a layer of peanut butter mixture to the molds. Top with a layer of chocolate mixture. Repeat twice more.
Tap molds gently on the counter top to knock the air bubbles out.
Freeze for 4-6 hours. The amount of time it takes to freeze the pops will depend on how big your molds are.
